Superb, light, thin but very wide pizzas concentrating on taste and texture rather than gunk & bulk of the ‘standard’ product. Very interesting, good quality ingredients & flavours. Very nice red wine too. Coffee & dessert to suit, again not heavy, with water all for €30. So good to have variety. Ideal! Will return, when next in Milan Thank you

La pizzeria CAGIADA si ispirata alla tradizione della pizza leggera, sottile e croccante. La leggerezza è infatti la caratteristica distintiva della pizza Cagiada, un prodotto unico e originale fatto con un impasto leggero da 130g a lunga maturazione e materie prime 100% italiane, accuratamente selezionate nel rispetto della stagionalità. Il risultato è una pizza leggera, sottile e fragrante. Un impasto semplice e leggero (farina di grano di Tipo 1, acqua, olio e sale) e una maturazione lenta di 36 ore. Viene utilizzato poco lievito e 130 grammi di impasto che viene prima stirato meccanicamente e poi rifinito a mano, risultando così sottile da richiedere una farcitura precisa e una cottura lenta in forno a 200-220°C. Ne risulta una pizza veramente leggera e di alta digeribilità, dove la base non sovrasta il sapore della farcitura. Ho potuto assiaggiarne diversi tipi durante un giro-pizza e le ho trovate tutte buonissime. Super consigliata.
